Some years ago during a trip to France I bought a bottle of chestnut-flavored liqueur. While it goes well with foie gras, I don't make that at home very often. And now that they've banned that delicacy here in California I had to find something else to do with it. It was hot outside, so I came up with this Caribbean-style drink. It's in the same general family as a Rum Runner but less fruity and more nutty - a balance of fruit and nut is what I was going for. I know you probably don't have a bottle of chestnut liqueur in your bar but you can substitute Amaretto or any other nut-flavored liquor. Still, the 'chest' is for the chestnut. —ProfPessimist
