Author Notes

So I'm sitting with my girlfriend one night, and I see her reach for a spoonful of peanut butter...and a box of nerds. She then shoves the peanut butter in her mouth, pours the box of nerds into her mouth, and eats the whole thing in one bite. I'm aghast, to be honest, but she orders me to do the same, and I realize it's a genius twist on a PB&J sandwich. I decided to throw it in some ice cream. And then promptly into my mouth. I suggest you do the same. —Fresh Beats, Fresh Eats

Ingredients
  • Peanut Butter Ice Cream with Nerds
  • 1 cup Creamy Peanut Butter
  • 2/3 cup Sugar
  • 1/3 cup Milk
  • 2/3 cup Half and Half
  • 2 cups Heavy Cream
  • 1 1/2 teaspoons Vanilla Extract
  • 6 Nerds (Mini Boxes)
  • Chocolate Marshmallows
  • 3/4 cup Water
  • 1/2 cup Water
  • 2 cups Sugar
  • 2 tablespoons Gelatin
  • 1/8 teaspoon Salt
  • 1 tablespoon Vanilla Extract
  • 1/2 cup Cocoa Powder
  • Powdered Sugar
Directions
  1. Peanut Butter Ice Cream with Nerds
  2. Put the peanut butter and sugar in a bowl, and whisk until they’re combined.
  3. Whisk in the milk and half-and-half on low until it’s creamy, it should take about 2 minutes.
  4. Whisk in the vanilla and heavy cream, then cover it and chill in the fridge for a couple hours.
  5. Pour the mixture into your ice cream maker, and run according to your machine's instructions. Add the nerds in at the end just before the ice cream starts firming up.
  1. Chocolate Marshmallows
  2. Pour the gelatin and 1/2 cup of water into a bowl.
  3. Bring the other 3/4 cup of water to a slow boil, then stir in the sugar until it dissolves. Keep it on medium for another 15 minutes, and give it a stir a few times while it’s on the stove.
  4. Pour the mixture in a stand mixer and mix on low for 30 minutes. Add cocoa powder after 25 minutes.
  5. Cover the bottom of a container (like a tupperware) in wax paper, spray it with non-stick spray, and dust it with powdered sugar. Then pour your mixture in and freeze overnight.
  6. After freezing, dust with plenty of powdered sugar (don't hold back, folks), and cut into whatever shapes you want. Serve with ice cream.

Just imagining this flavor combo is why I read recipes:) I believe the texture would be just as good as the taste.
