Concord Grape Balsamic Shrub

Shrub is a vinegar-based beverage made palatable with loads of fruit and some sugar. This shrub, inspired by recipes from the blogs The Year in Food and Reclaiming Provincial, is all about early fall with concord grapes and a bit of balsamic vinegar. This can be served as a mixer with club soda, whiskey, or vodka, but it's also great when sipped straight! —duclosbe1

Ingredients
  • 3 1/2 cups Concord grapes--about one dry quart
  • 1 cup sugar
  • 1 1/2 cups white wine vinegar
  • 2 tablespoons balsamic vinegar
Directions
  1. Combine the grapes with the sugar and mash the fruit to release its juice. Cover with plastic wrap and let it sit overnight (or up to two days if you get busy!) in the fridge.
  2. Strain grape juice through a fine mesh strainer into a bowl and let it sit for about half an hour. At this point, I placed the remaining grapes onto a double thickness of cheesecloth and gave it a good squeeze to extract any last bits of juice. A wooden spoon in the strainer would also work.
  3. Add the vinegar to the juice, then pour the mixture into a quart container and let sit for a week in the fridge.
  4. Serve with club soda (1:3 ratio) or whiskey (1:2 ratio). Or sip yours straight. The shrub will keep in the fridge for up to a year.

I didn't have any wine vinegar. I used a mix of white vinegar and balsamic. I added campari, st. germaine, lemon juice, and campari. Deeelicious.
