Sweet and Spicy Turkey Loaf

Sweet Thai chili sauce and a little sambal oelek turn inexpensive bland ground turkey into a family feast! ( And a nice sandwich the next day! ) —inpatskitchen

Ingredients
  • 2 slices bacon
  • 2 green onions, thinly sliced
  • 3/4 cup diced celery (small dice)
  • 2 cloves minced garlic
  • 2 pounds ground turkey (85/15)
  • 1 egg, lightly beaten
  • 1 1/2 cups panko crumbs
  • 1/4 cup plus 2 tablespoons sweet Thai chili sauce
  • 1 tablespoon plus one teaspoon sambal oelek
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup minced parsley
Directions
  1. In a saute pan, cook the bacon until crisp. Remove, crumble and set aside. Leaving the bacon drippings in the pan, saute the onion, celery and garlic until softened and fragrant.
  2. In a large mixing bowl combine the turkey, bacon, sauteed vegetables, egg, panko crumbs, 1/4 cup of the sweet chili sauce,one tablespoonof the sambal oelek, soy, salt, pepper and parsley.
  3. Shape the mixture into a 9x5 inch loaf and place on a parchment lined baking sheet or place in an oiled 9x5 inch loaf pan. I use one with that wonderful insert for easy removal.
  4. Brush the top of the loaf with the remaining 2 tablespoons of sweet chili sauce combined with the one teaspoon of sambal oelek and bake in a preheated 350F oven for 60 to 80 minutes or until the internal temp of the loaf reaches 160F.
  5. Note: Serve with more chili sauce if you like!

I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon. I watched and I learned...to this day I try not to procrastinate when it comes to entertaining. My cooking style is pretty much all over the place, although I'm definitely partial to Greek and Italian cuisine. Oh yes, throw a little Cajun in there too!
