Ingredients

sugar

12 ounces
cake flour

eggs

16 ounces
vegetable oil

2 teaspoons
cinnamon

1 teaspoon
baking power
-
1 pinch
salt

14 ounces
carrots shredded

6 ounces
walnuts chopped
Directions

Preheat oven 350F
Sift the flour, cinnamon, salt and baking power. Set aside.
In another bowl, mix eggs and sugar around 5 minutes in medium speed. Then add oil and mix again. When combined add the carrots and walnuts. When everything is mixed you can bake your cake.
For cakes time depends on the size but from 35 to 50 minutes and for cupcakes 23 minutes. The cake is ready when a toothpick comes out clean. Let the cake cool for 15 minutes.

For the carrots decorations you can make it in fondant or in chocolate as I made 2 days in advance with the green leaves for the tops.
