My flatmate's family farm oranges here in Sicily, so we had a glut. What to do? Mix those babies up with yogurt, cardamom and honey and freeze them, of course! Yum. —QuasiSiciliana

Ingredients

unwaxed orange

A few tablespoons of plain yogurt

1 tablespoon
of honey

Two or three cardamom pods, split and the husks removed
Directions

Wash the orange to get rid of any surface grime, and remove any leaves and the nubbly bit at the end (you know the bit I mean ...). Chop it all up, skin and all, into rough chunks so that your blender doesn't explode when you whizz everything together.

Add a couple of tablespoons of yogurt - just enough to make the eventual pudding smooth and creamy. The orange and cardamom should be the stars, rather than the yogurt.

Crack a couple of cardamom pods and drop the fragrant black seeds in with the orange and the yogurt.

Add a tablespoon of honey and blitz the whole lot with a stick blender until smooth and light. It can be eaten as is at this stage, or put into the freezer to make a fabulous frozen pudding. Delicious.
