Author Notes

These are incredibly simple to make, but wonderfully healthy and delicious. Thinly sliced apples are tossed with spices and baked for a crunchy sweet treat. These are perfect for an on-the-go snack, or adding to yogurt, granola, salads and more. —Posie (Harwood) Brien

Ingredients
  • 4 apples, any size
  • 1 tablespoon Saigon cinnamon
  • 1 tablespoon powdered ginger
  • allspice or nutmeg, optional
Directions
  1. Preheat the oven to 225 degrees F.
  2. Peel the apples (I like using a variety, but firmer ones work best: Fuji, Pink Lady, and Gala are all great options) and slice them as thinly as possible using a mandoline. (You can do this with a knife but it will be extremely difficult to get them thin enough for the chips to be crunchy). Make sure the slices are equally thin in order for the chips to bake properly.
  3. Lay the slices on a parchment-lined baking sheet and sprinkle evenly with the spices (feel free to play with flavors here: allspice and nutmeg would work nicely).
  4. Bake the chips for an hour, then flip each chip over and bake for another hour. The chips should be crisp by this time, and they will harden even more as they cool so don't worry if some are slightly softer in spots.
  5. This a great batchable recipe! Make as many trays at once as you like, and if you want a more flavorful chip, go heavy on the spices.
