Ingredients

1 cup
all-purpose flour

1/2 cup
packed brown sugar

1 teaspoon
baking powder

1/2 teaspoon
baking soda

1/4 teaspoon
salt

1/2 teaspoon
cinnamon

11/4 teaspoon
ginger

1/2 cup
milk
-
1/4 cup
acceptable vegetable oil

1/4 cup
molasses
-
1
egg
-
1 teaspoon
vanilla extract

pear, peeled, cored and diced into 1/2" inch cubes

egg white
-
1 cup
icing sugar

1/4 teaspoon
lemon juice
Directions

Preheat oven to 180° C /350°F. Grease and flour a 20 x20 cm baking tin

Stir together flour, brown sugar, baking powder, baking soda, salt and spices

In another bowl whisk together the milk, the oil, molasses, eggs and vanilla extract

Add the wet to the dry and combine gently but thoroughly

Add the diced pear to the batter and stir gently
-
Pour the batter into the prepared tin and bake for 30 to 40 minutes

Allow to cool for ten minutes and cut into 4 cm x 6.5 cm rectangles

Whisk the egg white, icing sugar and lemon juice and mix until creamy. Drizzle on top of the rectangles decoratively
