Sand Tart Sugar Cookies

This cookie recipe was passed down to me from my mother, and from my grandmother to her. Although my family does not have many family recipes, this is one of the few that we keep coming back to. We always make them around the holidays, and they are usually the cookies that Santa gets on Christmas Eve. (He keeps coming back, so they must be good!) The recipe is similar to a sugar cookie recipe, but with some slight variations and a cute almond in the middle. —bexwithanx6

Ingredients
  • 2 cups granulated sugar
  • 10 ounces unsalted butter
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 8 ounces almonds, peeled
  • Powdered sugar for rolling
Directions
  1. Preheat oven to 375 degrees F.
  2. Begin by placing the almonds in a pot of boiling water for 1-2 minutes, until the skin comes off easily. Peel all of the almonds and set aside.
  3. In a large bowl of an electric mixer fitted with a paddle attachment, beat the sugar, butter, 2 of the eggs, and vanilla until combined.
  4. Slowly add in the flour. On a board with powdered sugar to prevent the dough from sticking, roll out the dough until pretty thin, about 1/4 inch thick.
  5. Cut dough into squares and transfer to a cookie sheet either greased or with parchment paper.
  6. Combine the other egg white with 1 tablespoon of water and brush the cookies with it. Sprinkle with sugar. Place one peeled almond in the center and push a little hard so that the almond is stuck in the dough.
  7. Bake for 10-12 minutes, or until edges begin to brown.
