Author Notes

This is a recipe given to our family by a friend named Olga. It's real name is Olga's Upside Down Cake, but we know it as Olga. We loved it and didn't get it often because it was sweet (bad for our teeth) and chocolatey (expensive). We loved the cake with pudding underneath eaten warm. It seemed so luxurious, and still does. —luvcookbooks

I’m thinking about making a practice of trying recipes that have no reviews and no love, so I started with this one because...those recipes from the ‘60’s. I made this as directed with one exception...I cut the white sugar to 1/4 cup. Should’ve gone with the 3/4 c as directed. I removed it from the oven after 30 minutes, but would only go 25 min next time. Yes, there will be a next time! This made a chocolate cake with a rich pudding bottom! I used Valhrona cocoa, and that was a good choice. A lighter cocoa might be less satisfying. I’ll call this a 4 star dessert. A little whipped cream on top would not be wrong.
