Matcha (Green Tea) Ice Cream with Yuzu Citrus

According to the peer reviewed source known as Wikipedia, the health benefits of matcha tea exceed those of green tea because you ingest the whole leaf, not just the brewed water.
So, since matcha is a health food, I decided to turn it into ice cream, which makes ice cream a health food. Science calls this sound reasoning deductive reasoning. —add1tbsp

Ingredients
  • 16 ounces cream
  • 8 ounces milk
  • 6 ounces sugar
  • 6 egg yolks
  • 1 pinch of sea salt
  • 2 tablespoons yuzu juice
  • 1-2 tablespoons matcha powder
Directions
  1. Heat the milk, half of the sugar, and salt in a saucepan. Bring to a simmer and remove from heat.
  2. To make the ice cream, set up an ice bath by placing a 2-quart (2l) bowl in a larger bowl partially filled with ice and water. Set a strainer over the top of the smaller bowl and pour the cream into the bowl.
  3. In a separate bowl, stir together the egg yolks, matcha, and remaining sugar. Rewarm the milk then gradually pour some of the milk into the yolks, whisking constantly as you pour. Scrape the warmed yolks and milk back into the saucepan.
  4. Cook over low heat, stirring constantly and scraping the bottom with a heat-resistant spatula, until 160 degrees or the custard thickens enough to coat the spatula. Take it off the heat and continue stirring until it reaches 170 degrees.
  5. Strain the custard into the heavy cream. Stir in yuzu. Stir over the ice until cool then refrigerate to chill thoroughly. Preferably overnight.
  6. Freeze the custard in your ice cream maker according to the manufacturer’s instructions.

I'd like to see a vegan version of this, since the amount of dairy and egg pretty much cancels out any health benefits of the matcha in this recipe.

For that matter, I think my best bet is just taking a vegan ice cream recipe and adding the appropriate amount of matcha.

totally agree with ya that amount of eggs aswell is crazy and totally unessasary.I dont know where he gets his health facts but another recipe minus the cow cream and ton of eggs would be great in order the taste the matcha properly aswell as releasing a ton more health benefits maybe adding a chia egg or flax egg would be a bonus

Vegan ice cream is not ice cream. Ice cream is ice cream. I respect all types of cuisines and food philosophies and we need a reality check. The only really healthy thing you can make with matcha is to drink it dissolved in hot water. Anything you add to it to sweeten it will make it inflammatory for your body, or it will be unnecessarily processed, and so, vegan or not vegan, it will be harmful.

Sorry if I come out sarcastic in your brain washed mind but vegan icecream is real icecream.our bodies wernt intendered to digest other animals hormone induced milk.or there bodily fluid.This is why so many humans on this earth have digestive issues.Its like smoking or alcohol you only do it cause it taste good and not for any Health benefits.Some of us have done more in-depth research than you know of.So becareful when you call someone sarcastic when u itself haven’t done your research into health throughly.Me and a lot other people don’t eat eggs or dairy.My post is there for the community,for those who appreciate and share insight and not to slander make a mockery of personal life choices thank u.
