Sometimes you look around and the ingredients you have on hand are simply perfect for a cocktail. This simple recipe is easy to replicate at home and makes a refreshing and very elegant summer cocktail. —Lucy {Supergolden Bakes}

Ingredients
  • 1/4 cucumber, cubed
  • 1/4 cup gin
  • 1/8 cup simple syrup
  • 1/8 cup pasteurised egg white
  • 1 lemon, juiced
  • 1-2 tablespoons elderflower cordial
  • 1 tablespoon fresh thyme leaves
  • 6 strips of cucumber to decorate
Directions
  1. Put the cucumber, lemon juice, thyme and cordial in your shaker and muddle with a muddler or the clean end of a rolling pin. Try to get the juice out of the cucumber. Alternatively you can grate the cucumber on the large holes of a box grater and use your hands to squeeze the juice into your shaker.
  2. Add the gin, simple syrup and egg white and half fill the shaker with fresh ice.
  3. Shake vigorously until a frost forms on the shaker then strain into two chilled martini glasses (or use small elegant flutes).
  4. Decorate with strips of cucumber and a sprig of thyme.
