Blackberry Bramble IceĀ Pops

Rather than shaking up a cocktail, serve it on a stick. Experiment with your favorite cocktail recipes and keep these beauties stocked in your freezer to quench your thirst on the hottest days. Here is a frozen version of one of my favorite summer cocktails, the Blackberry Bramble. —Diana Yen

Ingredients
  • 3/4 cup fresh lemon juice
  • 1 cup water
  • 3/4 cup superfine sugar
  • 1/4 cup gin
  • 1 1/2 cups fresh blackberries
Directions
  1. In a pitcher, mix together the lemon juice, water, sugar, and gin, stirring to dissolve the sugar. Pour the mixture into the ice pop molds, leaving 2 inches for the blackberries. Freeze until partially frozen, about 1 hour. Meanwhile, mash the blackberries with a fork until broken down and chunky. Top off the ice pops with the mashed blackberries and insert the wooden sticks. Return the ice pops to the freezer and freeze for at least 3 hours, until frozen through.
