cherry tomatoes

jalapeños sliced

red cabbage shredded

avocado thinly sliced

cup tomatillo salsa

limes cut into wedges
Directions

Preheat oven to 250 degrees. Cut tomatoes in half, place on a skillet and sprinkle with salt. Place in oven and let cook for 1 hour. Season salmon with salt and pepper and grill for 4 minutes each side. Top with dried tomatoes, peppers, cabbage, and avocados. Drizzle with tomatillo salsa and lime. Enjoy! Serves 4
