I love the flavor of everything bagels and I thought, these flavors would go great with almost anything. I was needing a recipe for a healthy cooking class and came up with this fun take on smashed potatoes —Jimmy Hoxie

Ingredients

1 1/2 pounds
red potatoes, washed

cloves garlic

2 tablespoons
olive oil

yellow onion, washed, peeled and sliced thinly

8 ounces
low fat cream cheese, softened

1 tablespoon
poppy seeds

1 tablespoon
toasted sesame seeds

1/4 teaspoon
ground black pepper

1 pinch
salt

3/4 cup
hot stock (either vegetable, chicken, or beef)
Directions

Place the potatoes and garlic in a large stock pot and fill the pot with water to cover the vegetables. Place the potatoes and garlic in a large stock pot and fill the pot with water to cover the vegetables. Place the pot on the stove burner and bring the water to a boil. Boil the potatoes until they are tender, about 15 minutes.

In a medium sauté pan, heat the oil over medium heat and add the onions. Allow the onions to cook slowly, stirring every so often, until they are golden and soft

Once the potatoes are tender, drain them and return them to the pot. Add the softened cream cheese and onions and mash with the back of a spoon or potato masher. Add the poppy seeds, sesame seeds, salt, and pepper and mash more to incorporate. Add the stock, a little at a time until the desired texture is reached. Serve hot, or save the leftovers and make potato cakes out of them.
