This past summer, I discovered the joy of using tarragon as the main flavor for dishes rather than bundling it with other herbs. My tarragon renaissance led to a tarragon simple syrup, which naturally led to the question, what to do with it? Adding a splash to a gin & tonic was an obvious choice. —Kay Dominguez

Ingredients
- Tarragon simple syrup

1/2 cup
sugar
-
1/2 cup
water
-
1 bunch
tarragon
- Tarragon gin & tonic

1 tablespoon
tarragon simple syrup

lime
-
8 ounces
tonic water
-
1.5 ounces
gin
-
crushed ice
Directions

In a small saucepan, heat water and sugar to a boil. Whisk until the sugar is dissolved. Add tarragon and let boil for 2-3 minutes. Take saucepan off of the heat and let stand for 30 minutes.

Squeeze juice from one lime. Shake all ingredients together in a cocktail shaker, then serve over crushed ice.
