Ingredients
  • Basic
  • 2 Roma tomatoes, cut into quarters, seeded, diced into 1/4-inch cubes
  • 1 small English cucumber, seeded, cut into 1/4-inch cubes
  • 1 red bell pepper, cut into 1/4-inch cubes
  • 1 yellow bell pepper, cut into 1/4-inch cubes
  • 1 small finely chopped red onion
  • 1/4 cup lemon or lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon Himalayan pink salt
  • freshly ground black pepper
  • Choice
  • For Gazpacho Salsa Add
  • 1 jalapeno, seeded, finely chopped
  • 1/4 cup chopped fresh cilantro
  • For Greek salsa Add
  • 1 teaspoon chopped fresh oregano
  • 1 cup kalamata olives, coarsely chopped, mix before you add cheese
  • sprinkle with crumbled feta cheese, do not mix after you add cheese.
  • For Fruit salsa Add
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 2-3 cups diced mango, papaya, peach, plums or pineapple
  • For Black beans salsa Add
  • 1/4 cup chopped fresh parsley or cilantro
  • 1 can(19 oz) black beans, drained and rinsed
  • 1 jalapeno, seeded, finely chopped
Directions
  1. In a bowl put all ingredients for individual salsa and toss.
  2. The basic recipe can be made the day before.
