Nigerian Beef Suya

This grilled beef recipe is a popular street food in Nigeria. We also have the chicken version. Same spice mix but you can use it for other types of protein. —Afrolems

Ingredients
  • 1/2 pound Beef Flank
  • 1 cup crushed kuli kuli (crushed peanuts that the oil has been drained)
  • 2 teaspoons Paprika
  • 1 teaspoon Ginger powder
  • 2 Bouillon cubes
  • 1 teaspoon Garlic powder
  • 2 tablespoons Chilli powder
  • 1 teaspoon Crayfish powder
  • 2 pieces of Negro pepper
  • 1 teaspoon Salt
  • 1 Cooking Spoon Vegetable Oil
Directions
  1. Cut the your beef into thin stripes. (It is easier to cut when you freeze the beef before cutting to make your stripes come out smooth) Mix your crushed kuli kuli with all your spices and rub the beef with the mix. Pour the oil over the beef and leave it to marinate for about 3 hours. (Tip: rub oil on your hands before handling the spices as you would be handling chilli powder or wear gloves)
  2. You can choose to place the beef in skewers or leave as is. Preheat your oven to 375 degrees, line the oven tray with foil and grease the foil with oil then place the seasoned beef on the foil and place in the oven to grill for 20 minutes, turn it over to brown for another 10 minutes. Make sure to check if the beef is cooked. Check for seasoning correction and re-season as necessary. (If the beef is not browning but is cooked, increase the temperature of the oven and allow to brown for a few extra minutes)
  3. Serve with onions and tomatoes as garnish. p:s – If you have the Suya spice mix, you can skip the step of mixing the spices and just rub your suya mix on with oil on the beef. You may choose to add more seasoning cubes or chilli powder.
