A popular snack and pupu (appetizer) table staple, boiled peanuts in Hawaii are often flavored with star anise. This is a nod towards the Chinese population who settled in Hawaii to work on the sugar plantations. —kikukat

Ingredients

2 pounds
fresh peanuts, washed well

1/4 cup
rock salt
-
2
star anise
-
2 quarts
water
Directions

Place peanuts into large pot. Cover with water. Add salt and star anise. Bring to a rolling boil. Start timer (25 minutes) when water is at a rolling boil.

Remove pot from heat, but leave peanuts in pot until they all sink to the bottom. Drain.
