Directions

Combine orange juice and ginger in a small saucepan and bring just to a simmer. Remove from heat and add chocolate, whisking until smooth. Pour the mixture into a metal bowl set in a large bowl filled with ice water. Using a hand-held mixer with a whisk attachment, whip mixture just until chocolate holds a very soft peak. Refrigerate, covered, until ready to serve.
