Amaretto Cherry Brownies

One can never have too many brownie recipes, right? These are pretty fudgy, if you like a cakier brownie add a bit more flour, maybe 1/4 cup. —aargersi

Ingredients
  • 1/2 cup dried sour cherries
  • 1/4 cup amaretto
  • 2 sticks unsalted butter
  • 6 ounces unsweetened choclate (how dark is up to you - depends on your dark chocolate love)
  • 2 cups sugar
  • 1 1/2 tablespoons vanilla
  • 3 eggs
  • 1 1/2 cups flour
  • sliced almonds (I totally forgot to measure, but they are for sprinkling on top)
Directions
  1. Soak the cherries in the amaretto until most of the liquid is absorbed, this will take maybe 45 minutes so start early. Preheat your oven to 350 and spray your pan - either a 9x13 or THE EDGE (see photo) with baker's no-stick. This may be a true baker's faux pax but the stuff works great.
  2. Melt together the butter and the chocolate (I did it the lazy microwave way on half heat) then whisk in the sugar and vanilla. Whisk until this is smooth and shiny.
  3. Whisk the eggs in a separate bowl, then slowly whisk those into the chocolate (make sure the chocolate has cooled enough that they don't scramble). Again, whisk until it is all very smooth and shiny.
  4. Now stir in the flour, avoid over mixing at this point. When the flour is mixed in, fold in the cherries along with any unabsorbed amaretto and pour the batter in to the pan. Top with sliced almonds and bake for 30-35 minutes until a toothpick comes out clean. Allow them to cool before you cut them up and dive in.

The flavor of the brownies were very good but i followed the baking time of 45 minutes and they were overcooked. lucky i baked two other desserts to bring to work.

oh, man, these sound fantastic. My grandmother's favorites - cherry, chocolate, and amaretto. Definitely making these during the holidays. Thanks for sharing!

Is it really 1-1/2 tablespoons of vanilla, or did you mean teaspoons? (more normal for a brownie recipe.) In a 9 x 13 inch pan, the brownies baked in 25 minutes, 45 minutes would have been too long. Everyone who ate them liked them very much. They tasted especially good served frozen on a 90 degree day.

I really did tablespoons! I like a lot of vanilla / cherry / almond going on - but the basic brownie is super flexible so go with what you like - I am glad you like them! My bake time is for the edge pan which has deep channels so I guess that's why it is longer ... freezing is an great idea!!!
Holy Guacamole, were these good - I liked them, they were easy to make, and I got universally good reviews from guests. I did swap brandy for the amaretto, because that's what we had, and I did add the extra 1/4 cup of flour because I thought it would make them easier to cut and serve, but I will happily try the gooier Amaretto-laced version at the earliest opportunity.

Chocolate and amaretto!!! Yikes! sounds like a perfect recipe for a great brownie. Oh Dear!! my doctor told me to either stop eating or drinking too much wine! (when is too much chocolate or wine?}

Well, you have to eat to soak up the wine so he is nuts. I say just go for a nice long walk, then eat, and wine :-)

Mmmm..mmm..mmm...looks very interesting and tasty -- looking forward to trying them next time I am in the brownie/chocolate mood -- love the addition of amaretto...

Hey CFWG - I did my usual try one and then send them to work with Mr L (self preservation) and one of his coworkers said they were the best brownies she'd ever had! I think the booze helps - let me know what you think when you try them!!!
