Author Notes

These pork chops are a wonderful fall meal. The ginger and orange juice add a fusion twist. The addition of apples adds another layer of flavor and taste.
The recipe originated from an old TV show called Northern Lights. Over the years I have tweaked the recipe to my liking. —Sunnycovechef

  2. In a bowl combine the orange juice, ginger, brown sugar and zest.
  3. Peel and quarter the apples.
  4. Heat the oil in a large frying pan. Brown the chops in the oil for 4 to 6 minutes on each side. Remove the pork and spoon or pour out most of the accumulated fat. Return the chops to the pan and pour the orange juice mixture over them.Bring to a boil, add the apples and cook covered for 10 to 12 minutes , until the pork reaches a temperature of a 140 degrees. Turn off the heat and let the pork sit covered for another 3 to 5 minutes, Now the temperature of the pork should be around 150 to 160. Do not overcook the pork because the pork chops will get tough. You want them nice and juicy.
