Chocolaty, Walnut no-bake Brownies

This vegan chocolate brownie recipe is inspired by Emily from This Rawsome Vegan Life. Full of yummy heathy ingredients and being no-bake makes them super easy to make! These brownies are also sandwiched together and topped with a yummy vegan chocolate frosting. Hope you enjoy this healthy, vegan treat! —Lonccia

Ingredients
  • Brownie Filling
  • 2 cups oat four*
  • 2 cups walnuts
  • 1/2 cup organic maple syrup
  • 2 tablespoons black chia seeds
  • 4 tablespoons carob powder
  • 2 tablespoons cacao powder
  • 4 tablespoons melted coconut oil
  • 2 teaspoons vanilla extract
  • 2 pinches salt
  • Brownie Frosting
  • 4 tablespoons melted coconut oil
  • 4 tablespoons organic maple syrup
  • 4 tablespoons cacao powder
  • 1/4 cup walnuts
  • 1/4 cup walnuts for garnish
Directions
  1. Brownie Filling
  2. *If you can't find oat flour, use normal or gluten-free oats, put them in a food processor and break them down until they become a fine powder*
  3. Place all ingredients into a food processor.
  4. Process until all ingredients are well combined and form a big doughy ball. Its good to process just to nice and combined, you still want a bit of texture in the mixture.
  5. Press down with your fingers, spoon or spatula to create a smooth surface.
  6. Place brownie filling into the fridge to set while you're making the frosting.

  2. Place all ingredients, accept walnuts, in a bowl and mix together.
  3. Fill a plastic zip-lock bag with 1/4 walnuts. Using a rolling pin or any round item break down the walnuts into smaller pieces. You could also do this in a food processor or with a mortar and pestle.
  4. Take first brownie layer out of the fridge, and if went touched, is nice and firm, pour over half the frosting.
  5. Spread the frosting so it covers the entire brownie layer. Add the crushed walnut pieces onto of the frosting layer and place back in the fridge to harden.
  6. Repeat the brownie filling then brownie frosting steps so you create a filling, frosting, filling, frosting layered effect
  7. Before you put the last layer of frosting into the fridge to set crumble over some walnuts as a topping
  8. Slice and enjoy!! - would be super yummy with ice-cream or even a layer of smooth peanut-butter spread right on top
