Black Bean Quinoa Burgers

Ingredients
  • 1/2 cup quinoa (dried)
  • 1 cup water
  • 3 tablespoons olive oil, divided
  • 2 garlic cloves, finely chopped
  • one 15-ounce can black beans, drained and rinsed (or 15 ounces cooked black beans)
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon tomato paste
  • Suggested burger toppings: sliced avocado, sprouts, honey mustard, hot sauce
Directions
  1. Combine the quinoa and water in a small saucepan. Cover the pot and bring to a boil over high heat, then reduce the heat to low and simmer until the water is absorbed, about 5 minutes.
  2. Meanwhile, heat 1 tablespoon of the olive oil in a medium sauté pan. Cook the onion and garlic until soft, about 5 minutes.
  3. In a medium bowl, combine the black beans, breadcrumbs, egg, salt, cumin, chili powder, and tomato paste. Add in the cooked quinoa and the sautéed onion and garlic. Using your hands, squish the mixture together until everything is well incorporated. Form 4 equal-size patties. Heat the remaining 2 tablespoons of oil in a large skillet over medium heat. Cook the burgers in the hot oil until they are brown and crisp, about 7 minutes a side. Serve with sliced avocado, sprouts, and honey mustard or hot sauce.

This is a family favorite. We make it all the time. However, i can never got the burgers to stay together once they start cooking. I have tried everything. Any suggestions would be greatly appreciated.

These are so delicious! And I know I'm incredibly late to the party here. But my burger mixture was suuuuuper crumbly. It was really hard to form patties. Any tips to get them to stick together better?

Onion isn't in your ingredient list. What type and amount do you recommend?

Shoot! I'll have to make an edit. I do 1/2 a large yellow onion or a whole small yellow onion.
