Okay, I wasn't going to share this because I'm slightly embarrassed by how not balanced this is to eat for lunch, but it's delicious and I love it, and I do eat it for lunch, so I figured I'd share in case anyone else occasionally likes to indulge with something that's pretty much a dessert as their midday main course! —fiveandspice

Ingredients
  • 2 slices of your favorite pumpkin bread
  • 3-4 quarter inch thick slices of good brie cheese
Directions
  1. Make a sandwich out of the pumpkin bread and the brie slices. If desired, toast the bread first. Enjoy :) !

My four year old just started eating brie AND she loves pumpkin bread..this is a must try for her - especially since I can only pack her dairy lunches! Thanks for the wonderful idea!!!!

Well, first off thanks! I don't know if I can quite claim the title of "lunch genius", but I do know that I start looking forward to lunch from the moment I arrive at my office :).
And second, I definitely use sweet pumpkin bread - which is why it's a little decadent to have for lunch, think second cousin of a pumpkin cheesecake - but I'm sure it would be delicious with a pumpkin yeast bread as well. I was actually just thinking about baking a yeast bread, so I may give that a try.

Are you kidding?!! This is incredibly nutritious . . . veggies and fiber in the bread, all kinds of vitamins and other nutrients in the grains, plus protein, calcium, etc. in the cheese. Life is for enjoying. I love this recipe! ;o)
