Sardine Toast with Lentil Hummus and Roasted RedĀ Peppers

I love sardines. There, I said it! What's with all this prejudice against sardines, anyway? Sardines are yummy in my book. Especially with pears and hummus.

But I also like sardines because they're packed with protein and omega-3 fatty acids. The protein in sardines is considered complete, meaning that it provides all the amino acids that the body cannot produce on its own.
My favorite is grilling them. I used to spend my summers in Spain when I was little, and every once in a while we'd go into town to the port for dinner. There, the local fishermen would grill the sardines they'd caught that day. I remember it gave off the most wonderful aroma.
I eat a sardine toast at least once a week for lunch when I'm pressed for time. It's so easy to assemble and makes for a healthy and delicious lunch or appetizer. Enjoy!

Ingredients:

1 can of sardines, packed in olive oil

about 3 tablespoons fire roasted peppers in a jar, thinly sliced

1/4 of a ripe pear, sliced thinly

4 small slices of country bread (for appetizer), or one big slice (for lunch).

about 1/4 cup of french lentil hummus (from whole foods)

olive oil for drizzling

salt and pepper to taste

chopped parsley, for garnish

Make it :

Toast the bread slices.

Drain the sardines and pat dry with a paper towel.

Spread the french lentil hummus onto toasts, top with sardines, sliced pear and roasted peppers. Season, drizzle with a little olive oil and garnish with parsley. Voila! —Mighty Delicious
