Coffee with milk in Vietnam means a dollop of sweetened condensed milk combined with a very strong & bitter brew, a pretty balanced combination. These popsicles turn Vietnamese coffee into a winning afternoon pick-me-up that will jolt you into the afternoon and help fix that urge for a sweet treat too.

Ingredients
  • 2 cups strong coffee
  • 1 cup whole milk
  • 1/4 cup sweetened condensed milk
Directions
  1. Add 2 tablespoons of sweetened condensed milk to the brewed coffee and whisk to combine. Then, add the remaining 2 tablespoons of sweetened condensed milk to whole milk, and whisk to combine that. Place coffee mixture in the fridge to chill.
  2. Fill popsicle molds with 2 tablespoons each of the milk mixture. Place in freezer to completely freeze, about 1-1 1/2 hours. Top up each popsicle with the chilled coffee mixture. Secure popsicle sticks with clothespins, or chill the popsicles until they are slushy, about 1 hour. Then add the popsicle sticks and let them freeze completely, about 2 hours total. Remove popsicles from molds by briefly running under warm water.

This recipe has a good foundation but the instructions don’t work. If you follow these directions you won’t have anything that looks like the photo at the top of the recipe. Vietnamese coffee has everything mixed together, so I don’t understand freezing the milk part separately. Also, that prevents you from being able to put the popsicle stick through the top portion and then it just falls off when you take the popsicle out of the mold. I just ruined an entire batch because of that! My advice: mix everything together and freeze it. Add the sticks while things are still a bit slushy.

I tried these and the coffee portion was not popsicle-y at all...it turned out like a block of ice. The milk part was good. Did I do something wrong?
