Masala chai is known as a spiced warm, milky sweet tea made distinct by the spices brewed in it—most notably cardamom. When you freeze this fragrant tea and spice the milk up too, you get a seriously flavorful iced treat that’s perfect to cool you off any time of the day.

Ingredients

cardamom pods, smashed and seeds removed, divided

cloves, divided

cinnamon stick, broken in half

slices fresh ginger, divided

black peppercorns, divided

1 teaspoon
fennel seeds, divided

star anise, divided

3 tablespoons
brown sugar, divided

black tea bag
Directions

In a small pot, combine water, 5 cardamom pod seeds, 2 cloves, 1/2 a cinnamon stick, 2 slices of ginger, 3 black peppercorns, 1/2 teaspoon of fennel, 1 star anise, and 2 tablespoons of brown sugar. In a separate small pot, add milk and the remaining spices, plus 1 tablespoon of sugar.

Place both pots over medium-high heat and bring to a boil. Reduce heat to low and simmer, covered for 10 minutes. Add tea bag to water mixture for last two minutes of simmering.

Fill 8 popsicle molds halfway with the chai tea mixture, and chill milk mixture in the fridge. Place popsicles in the freezer until frozen solid, about 1-1 1/2 hours. Top up each popsicle with milk mixture. Add popsicle sticks and secure with clothespins, or let them freeze for 45 minutes and add popsicle sticks when the mixture is slushy. Then let the, freeze completely. Remove from popsicle molds by briefly running the molds under warm water.
