Fried Egg Noodles

My Dad tells me that his grandmother used to make her own pasta, and that she would fry egg noodles regularly. His mother (my grandmother) passed down the tradition, and I grew up eating fried noodles. As kids, my sisters and I would request them; as an adult, I make them probably more often than I should. They are crispy and crunchy and quite easy and delicious, and my Dad said I could post this here. :) Note: this recipe is infinitely expandable. Don't expect to have leftovers.

Ingredients
  • Egg noodles
  • Butter
  • Salt to taste
  • Pepper to taste
Directions
  1. Depending on how many servings you want to make, boil water in 3qt or larger saucepan. Add noodles, cook until al dente. Drain, toss with butter.
  2. Heat a cast iron skillet (use non-stick if you prefer) and melt a pat of butter in the skillet. Dump noodles in skillet. Mix butter and noodles with a spatula, turning noodles as they brown. Add salt and pepper to taste.
  3. When noodles are speckled with brown, they are ready to eat. Enjoy!

we often had fried noodles too as kids. my grandmother would make them fried in drippings from a pork or beef roast. and often covered them with applesauce
