Author Notes

A classic French 75 is made with gin (or Cognac), lemon, and sparkling wine, but other spirits work well, too, included flavored ones—there’s not much that doesn’t play nice with citrus and bubbles! Here, citrus-berry vodka gets a bright, fizzy lift from lemon and a big pour of sparkling wine. For this drink in particular, we recommend a dry French sparkling wine rather than a sweeter-leaning Italian Prosecco or Spanish cava. (No need for pricey Champagne, though; an inexpensive Crémant de Limoux works great.)

To make simple syrup: combine one part sugar with one part hot water until the sugar is dissolved. Let cool before using. —Food52
