I found recipes for Apple Cake and Caramel topping and decided to tweak them a bit and combine them to make an Apple Pie Cake. Here's what I came up with. —christycooks

Ingredients
- For the Cake

unsalted butter, softened

cream cheese, softened

1 cup
granulated sugar

1 cup
light brown sugar

3 cups
all-purpose flour

1 teaspoon
baking soda

3 teaspoons
cinnamon

1/2 teaspoon
allspice

1/4 teaspoon
freshly grated nutmeg

1/2 teaspoon
kosher salt

2 teaspoons
vanilla extract

firm apples, chopped into 1/2" pieces
- For the caramel

1/2 cup
unsalted butter, softened

3 tablespoons
all-purpose flour
-
1 teaspoon
cornstarch
-
1/4 cup
water, scant
-
1/2 cup
granulated sugar
-
1/2 cup
light brown sugar
-
1/4 teaspoon
cinnamon
-
1/8 teaspoon
freshly ground nutmeg

1/8 teaspoon
allspice

1 teaspoon
vanilla extract
Directions

Heat oven to 325° F.
Grease two 8" round cake pans and line with parchment. Or one 9" round cake pan.

In a large bowl, using an electric mixer on medium-high, beat the butter and cream cheese till combined. Add the granulated and brown sugars until light and fluffy, 3 minutes. Add the eggs, one at a time, beating after each addition. Add vanilla.

In another bowl, combine the flour, baking soda, cinnamon, allspice, nutmeg, and salt. Gradually add the flour mixture to
the egg mixture. The batter should be thick. Scrape the batter into prepared baking pan(s).

Sprinkle chopped apples on top and then top with caramel sauce. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes for 2 round pans 50-55 for 9" pan. Transfer to a wire rack. Let cool for at least 20 minutes before cutting.

Caramel Sauce:
Melt the butter in a saucepan. Stir in flour and corn starch to form a paste. Add water, sugars, vanilla and spices; bring
to a boil. Reduce temperature and let simmer for a few minutes. Gently pour the sugar and butter liquid over the apples. Bake as directed.
