Ingredients

2- 1/2 cups
all-purpose flour

1/2 cup
butter, softened

1/2 cup
canola oil

1- 1/2 cups
chocolate chips (dark or semi-sweet)

1 cup
granulated sugar

1/2 cup
brown sugar

1 teaspoon
vanilla extract

1 teaspoon
baking soda

eggs

1/2 teaspoon
salt
Directions

Over very low heat, add canola oil to a small saucepan. Add 1 cup chocolate chips to the oil and stir constantly until chocolate is almost melted, then remove from heat immediately. Chocolate should be warm NOT hot or it will burn. Transfer chocolate sauce to a large mixing bowl.

Add softened butter, granulated sugar and brown sugar to the mixing bowl with the chocolate sauce. Beat on medium speed until smooth. Add vanilla and beat in eggs one at a time.

Add half the flour, salt, and baking soda and mix to combine. Add remaining flour and mix to combine. Add remaining chocolate chips to the cookie dough. Place dough in the fridge for 10 minutes to slightly firm up.

Preheat oven to 375 degrees.

Drop 1-1/2 tbsps of cookie dough onto a parchment linked baking sheet. Bake cookies for 9-11 minutes until a toothpick comes out clean. Immediately transfer cookies to a cooling rack. Enjoy!
