Put dates, coconut, cookies and nuts together and what do you get? Thats right, melt-in-the-mouth date slices.

I’ve adapted the recipe of a date-cake served at Bagels&Beans cafe’s in the Netherlands.

The texture is the best about this recipe. The dates become sticky and a bit like caramel, the cookies and nuts stay crunchy!

You can make them in a big round tin or square tin and slice it in slabs or like a pie. Personally i like to make cute individual ones. —Karen Bergs

Ingredients
  • 250 grams Butter, unsalted
  • 150 grams Brown sugar
  • 1 Egg, whisked loosly
  • 500 grams Dates (fresh), chopped roughly
  • 25 pieces Digestive biscuits, broken up
  • 50 grams Walnuts, chopped (almonds work well too)
  • 1 shot Caramel syrup
  • desiccated coconut
Directions
  1. Use a wok or a big frying pan, so eventually all ingredients will fit in. Start by melting the butter over medium/high heat, and after it's melted add in the sugar and stir untill combined, then add in the egg and keep stirring vigorously for 2 minutes. Add all the dates to the pan and stir for another 2 minutes, then turn off the heat and add the cookie bits/ walnuts and syrup. Combine.
  2. Grease a 23cm round cake tin (or anything similar size that you have available), add the mixture and press in with a spoons round side. Put in the fridge to chill and set, then sprinkle with desiccated coconut and slice.

I've recently made these with 50% semi-dried figs and 50% fresh dates.. really prefer them this way at the moment!!
