Off-road Martha Stewart one pan pasta.
I wanted a healthier option for the pasta and to increase the protein so I used Banza brand chic pea pasta. I also added flavor by subbing vegetable broth for the water. I then added my two favorite pasta ingredients, Broccoli Rabe and mushrooms. I decided to omit the onions because it was a little too crowded in the pan. The lemon juice adds some brightness.

Ingredients

cloves garlic, sliced thin

2 tablespoons
olive oil

8 ounces
box of banza chick pea linguini pasta

4 cups
vegetable broth
-
12 ounces
sweet cherry tomatoes, halved

8 ounces
mushrooms, sliced

1 bunch
broccoli Rabe, chopped, thick stems removed

Pinch
chili flakes
-
1 teaspoon
salt or more to taste

1/2
lemon, juice

Handful
parmesan cheese
Directions

Heat 2 Tbs olive oil in a large straight-sided skillet over medium-high heat. Add the garlic and chili flakes and cook just until the garlic starts to brown.

Add the pasta and use your hands to roll it around the oil until its lightly coated with the oil.

Add the broth, tomatoes, mushrooms, rabe, salt. Bring the broth to a boil all the while turning and tossing the pasta to keep it from sticking together. Cook for 8 to 10 minutes or until the pasta is cooked.

remove from heat and stir in the juice from 1/2 a lemon and a handful of parmesan cheese.
