Cherry Olive Oil Clafoutis

My French-immigrant boyfriend called my version of Maliano's Olive Oil Cake a clafoutis and after Googling what that is, he's totally right. —VRB

Ingredients
  • 2 cups flour
  • 1 1/4 cups milk of your choice (I used almond, don't @ me)
  • 2 cups whole pitted dark cherries
  • 1 3/4 cups sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/3 cups olive oil
  • 3 large eggs
  • 2 tablespoons orange zest
  • 1/4 cup orange juice
  • 1/4 cup Cointreau
Directions
  1. Leaving the cherries aside, mix together all dry ingredients.
  2. In a different bowl, mix together all wet ingredients.
  3. Slowly and carefully combine the wet and dry ingredients.
  4. In a buttered pan that is at least 2 inches deep, cover the entire bottom with cherries.
  5. Slowly pour in all of the combined cake batter to cover the cherries.
  6. Place in the oven at 325F for a little over an hour.
  7. Let cool for at least 30 minutes before slicing and serving.
