Ingredients

2 cups
flour

1 1/4 cups
milk of your choice (I used almond, don't @ me)

2 cups
whole pitted dark cherries

1 3/4 cups
sugar

1 1/2 teaspoons
salt

1/2 teaspoon
baking soda

1/2 teaspoon
baking powder

1 1/3 cups
olive oil

large eggs

2 tablespoons
orange zest

1/4 cup
orange juice

1/4 cup
Cointreau
Directions

Leaving the cherries aside, mix together all dry ingredients.

In a different bowl, mix together all wet ingredients.

Slowly and carefully combine the wet and dry ingredients.

In a buttered pan that is at least 2 inches deep, cover the entire bottom with cherries.

Slowly pour in all of the combined cake batter to cover the cherries.

Place in the oven at 325F for a little over an hour.

Let cool for at least 30 minutes before slicing and serving.
