Ingredients

Preheat oven to 400 degree. Slice sweet potato in half length-wise and place on baking sheet. Drizzle with olive oil, sprinkle with coarse salt and bake for 30-40 min. Remove from oven and set aside to cool in fridge.

Cook quinoa. Once cooked, set quinoa aside to cool. Dice red onion and place in large mixing bowl with (cooked and rinsed, if using can) black beans.

Pulse oats in food processor until oats are broken down, but not as fine as flour. Set mixture aside.

Add cooled quinoa and black bean to large bowl with diced red onion and mash together. Once cool peel skin from sweet potatoes and add to quinoa and black bean mixture. Mix all ingredients slowly adding seasoning and oat mixture throughout mixing.

Using 1/2 cup measure Patty burgers and place on large baking sheet. Grease pan or tray with olive to avoid burgers sticking. Place burgers in fridge to chill, this will help prevent them from falling apart during cooking.

Once chilled, heat large cast iron skillet over medium-high until pan begins to smoke. Add olive oil to pan. Add burger patties to pan and cook for approx. 4 minutes each side.

Add all spices to bowl and whisk together. Set aside.
