Very Soft Scrambled Eggs with Gruyere and Thyme

I absolutely love gruyere and thyme quiche, but who wants to go through all the effort to make it on a regular basis? Instead, I take the flavors of the quiche and turn use them them when making incredibly soft scrambled eggs. —Malory

Ingredients
  • 2 eggs
  • 1 tablespoon milk
  • 1 teaspoon fresh thyme
  • 1 ounce shredded gruyere
  • 1 tablespoon butter
  • 1 pinch black pepper
Directions
  1. Add the eggs, milk, thyme, gruyere, and pepper to a bowl then whisk.
  2. Add butter to a pan set to low.
  3. Once the butter is melted, add the egg mixture and with a spatula begin to stir.
  4. Add the gruyere.
  5. Keep stirring until the gruyere is melted and the eggs are almost set then turn off the heat.
  6. Continue to stir until the eggs are at the desired consistency.
