Turkish cuisine has 291 different meatballs (kofte) recipes, it isn't hard to say Turkish people love meatballs, this recipe "kadınbudu kofte" has the funniest name among other meatball variations. Instead of using bread crumbs and grated onions, this recipe has cooked rice and chopped onions to create a moist mixture. Coating of flour and eggs helps to keep the juicy texture together and creates a delicious crust. They can be served with mashed potatoes or green salad. I prefer to serve them with homemade tomato sauce, baked mushrooms and horseradish sour cream. —shycook

flour

grated garlic

olive oil
Directions

Heat a medium pan over medium heat and add the onions and 2 tablespoons olive oil. Cook for 5 minutes until they start to soften. Add half of the ground beef and cook until the moisture is absorbed. Season with salt and pepper.

In a large bowl, bring remaining beef, rice, parsley, spices, garlic, one egg and cooked beef together. Season with salt and pepper. Mix well and form into balls.

Heat 2 cups olive oil in a frying pan.

Place the flour in a bowl. Beat 3 eggs in a small bowl. Dredge the meatballs in flour and then the beaten eggs. Coating each piece completely. when the oil is hot, add meatballs and fry until golden brown, for about 4 minutes. Drain on paper towels.
