We have a family secret that forever changes egg breakfasts. Instead of scrambling your eggs, scratch them! My mother taught me to make these and some days they are the only thing that gets me moving in the morning. They are so easy and so delicious that you wonder why anyone makes eggs any other way. —isothechef

Ingredients

eggs

1 tablespoon
butter

1 pinch
salt

1 dash
black pepper

1 splash
milk
Directions

Melt butter in a skillet (preferably non-stick) over medium-low heat.

Once the butter is melted, pour in the eggs and splash of milk. Do NOT stir them before they're in the pan. Get the eggs in there with the yolk intact.

Let the eggs sit for a bit, until the underside of the eggs is just beginning to fry.

Grab a fork and scratch! Continue scratching and moving the eggs around with your fork until they are cooked through but still creamy. You should be able to see the distinct colors of the white and yolk.

Top with salt and pepper and serve immediately. If you're feeling decadent, add Parmesan and/or fresh herbs.
