Ingredients
-
3/4 cup
light brown sugar
-
1/4 cup
honey
-
1/2
stick of butter, softened
-
1
large egg
-
1 cup
all purpose flour
-
1 teaspoon
of baking powder
-
1 teaspoon
of salt
-
1 cup
unsalted raw chopped cashews
Directions
-
Preheat your oven to 325 degrees Fahrenheit and prepare your 8x8 baking dish by lining it with parchment paper and spraying it with baking spray to make sure that the cashew bars will come out.
-
In a large bowl combine the brown sugar, honey, and butter until smooth and glossy but do not whip. You don't want air in your batter.
-
Next add in the egg and mix until well combined.
Then add in the flour, baking powder, salt, and chopped cashews. Mix until everything has come to make a delicious smooth batter.
-
Pour the batter into your prepare baking dish and bake in the oven for 40 minutes or until the center doesn't jiggle too much. There should be a bit of a jiggle.
-
Cut into 9 equal pieces and enjoy warm or cold! Both are great but is my favorite.
-
Optional way of making them: If you are feeling super lazy ignore all the instruction and throw everything into a bowl and mix it until you get a nice homogenous mixture.
