Stifado, as far as I know is a Greek recipe but can be also found in cooking of other countries. It's a very delciious, rather rare food, that you can find in restaurants but also cook on your own at home.
You can share it with family members but with friends as well.
A)INGREDIENTS
-One kg meet of beef
-Six to eight onions
-Olive oil
-Salt and pepper
-Clovis
-Red wine
B)PREPARATION
-We put meet in a big casserole with some blended onions and up to five tablespoonful olive oil
We mix this till color of meat gets brown and is fried with blended onion and olive oil. -As soon as color gets brown, we add six-eight peeled onions, of medium size and let them also be cooked with meat, by adding some more olive oil when needed, actually after pevious olive oil is absorbed.
-When this whole mix is cooked, and 2/3 of total time of cooking is spent-provided that we look at food, every five minutes, for not being burnt (temperature of cooking from 170 C-200C , stove of electric kitchen), we add salt of up to 3 teaspoonful, and some pepper to food.
-Toward end of cooking we add some clovis, actually, small pieces of it, bught directly from super-market, and let it also boil up to 10 minutes more from that point. Then in the end we add one small cup of red wine by spreading it to whole casserole of food, so that wine goes everywhere, to ''extinguish'' food, actually for making meat and onions more delicious.
This is real Stifado..
