A simple and savory side dish made with cubed Yukon gold potatoes, topped with a creamy cheese sauce and finished off with a delicious crumb topping. Melt in your mouth goodness. —Dash of Amy

Ingredients

medium side Yukon gold potatoes, peeled and cubed

2 tablespoons
butter

2 tablespoons
flour
-
1 1/2 teaspoons
salt

1/4 tablespoon
black pepper

1 cup
heavy cream
-
1/4 cup
chicken broth
- Bread Crumb Topping
-
1/2 cup
plain bread crumbs
-
1/2 teaspoon
salt
-
1/2 cup
shredded cheddar cheese

1/2 teaspoon
parsley
Directions

Place chopped potatoes in a baking dish.

Heat a large skillet over medium heat and melt the butter; then add the flour and mix until it forms a smooth paste.

Add the cream, salt, and pepper, and cook until smooth and bubbly.

Add the cheese stirring constantly until it's melted. (It will be thick.)

Pour the cheese sauce over the potatoes spreading it evenly on top, and pushing some down to seep into the potatoes.

Bake at 375* for one hour, or until potatoes are fork tender.

In a small bowl mix together the ingredients for the crumb topping.

Sprinkle over the potatoes, and broil for 3-5 minutes until cheese is melted and bubbly.
