Crab Fried rice is one of my wife's favorite dish and after years of cooking this dish various ways; we've settled on this recipe being our favorite. I hope you enjoy it as much as we do. —Tri Nguyen

Ingredients

2 cups
Cooked White Rice (Jasmine or Long grain)

8 ounces
White Crab Meat (cooked)

3/4 cup
Spring onions

Sugar

Soy sauce

1 teaspoon
Fish sauce

1/4 cup
Minced garlic

1 teaspoon
Cracked black pepper

Canola Oil
Directions

Preparing the ingredients:
2 cups of cooked white rice can be prepared the day before or earlier; ensure the rice is room temperature before preparing this dish.
Cooked crab meat should be properly drained.
Spring Onions - Diced but separate the base parts and the leafy parts. They will be added into the rice at different times.
In a small bowl mix the Soy sauce and Fish sauce.

In a large non stick pan or wok add 4 tablespoons of Canola oil and set to high heat. Spread the oil evenly in the pan or wok to prevent your ingredients from burning.

Once the oil has reached smoking point, reduce heat to medium high, and add garlic and the base part of the diced spring onions. Stir for about 20 to 30 seconds.

Move the onions and garlic aside and eggs. Scramble the eggs immediately if they are not already scrambled. Then proceed to mix in the onions and garlic within the pan.

Add your 2 cups of cooked rice to the pan stirring and using your Ladle or spatula to break up any big clusters of rice. Continue mixing for about a couple of minutes.

Once your rice has been been separated and mixed; add your soy sauce and fish sauce mixture. Stir for about 1 minute, giving time for the rice to absorb the sauce. Add 3/4 of your pepper and give it another quick stir before you proceed.

Add Crab and the rest of the green onion (save a bit of green onion for garnishing) and continue to stir for 2 minutes. It is important to prevent large pieces of crab from breaking apart as they can add some texture to your dish. Stir carefully.

Add 1 tablespoon of sugar and stir for about 20 seconds; immediately turn off the heat to prevent the sugar from burning.

Serving Preparations:
Grab a bowl or bowls you'll be serving this dish in and using tongs or chopsticks, find large lumps of crab meat within your fried rice and add it the bowl. This will add a more visually appealing final dish.
Add the remaining fried rice into the bowl or evenly distribute them to multiple bowls. Using a spoon or spatula firmly press the rice into the bowls.
Carefully flip the bowl(s) into a deep serving plate.
Lastly remove the bowl and top it off with some spring onion garnish and pepper.

Additional Notes:
Heat control is extremely important when cooking fried rice, if you see your ingredients are burning or not cooking properly, feel free to adjust the heat.
Stir times can also be adjusted depending on the heat levels and the type of pan you're using. The main purpose of stirring is to prevent the ingredients from sticking the the pan and evenly mixing the ingredients.
Additional cooked proteins can be added like shrimp, pork, beef or chicken, just make sure the total protein amount does not exceed 12 oz.
