This bar is packed with long lasting energy. I love the fact that it is so well balanced with nuts, salt, coffee and the sweetness of the dates. It is a great snack or a meal replacement that can be packed in your bag to keep you going all day, no matter what your daily routine might be.

You could wrap individually and freeze the bars. This way you would be able to keep them for up to 3 months. —Chef Reza Setayesh | Plant Loving Humans

Ingredients
  • 1 ounce olive oil
  • 2 pounds dates, pitted
  • 8 ounces raisins (any color will do, but I prefer golden raisins)
  • 4 ounces skinless, dry roasted, no salt added almonds
  • 12 ounces chocolate chips, semi sweet or dark
  • 2 tablespoons cacao nibs
  • 3 tablespoons espresso or strong coffee
  • 2 teaspoons Maldon salt flakes
Directions
  1. Puree the dates, raisins, almonds and olive oil in your food processor
  2. Place mixture in a bowl with the chocolate chips, cacao nibs, and espresso
  3. Mix well and press the mixture evenly in a 9x9 or 9x12 cookie pan
  4. Sprinkle with salt and place in refrigerator until firm and set
  5. Cut into desired size and place in an air tight container and keep in the refrigerator.

This is a very strange recipe. It says Cook time 40 minutes, but never says to cook the mixture. Instead it says to refrigerate mixture. And the 3 tablespoons of espresso or strong coffee, are they powdered coffee or prepared coffee? And do the chocolate chips stay full size, or are they chopped or melted? I would like to make this, but I don't understand the recipe.
