Tahini Date Cardamom Cookies

A delicious and healthy cookie that can be put together very quickly. This recipe has a short list of ingredients and does not need any technical skills or even equipment. It can be an after meal treat or a powerhouse snack. I love the mixture of the cardamom flavor and tahini plus the sweetness of the dates. —Chef Reza Setayesh | Plant Loving Humans

Ingredients
  • 1 cup diced dates
  • 6 ounces tahini paste (toasted sesame paste)
  • 5 ounces maple syrup
  • 12 ounces fine almond flour (you could use almond meal instead)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cardamom (if not available, it can be substituted with cinnamon or vanilla extract)
Directions
  1. Pre-heat your oven to 350F
  2. Mix all ingredients in a bowl with a rubber spatula until well combined
  3. Scoop into desired portion on a parchment paper-lined cookie sheet pan (at this point the scoops of dough can be put in the freezer for future use, if desired. Just take them out and bring them to room temperature before baking)
  4. Press down the scooped dough into discs that are anywhere from ¼ or ½ inch thick or 2-3 inches round
  5. Bake for about 10-12 minutes or until the edges of the cookies are golden brown
  6. Allow to cool on the pan, and enjoy!

These are superb cookies with perfectly balanced flavors. I was doubtful about including a full teaspoon of salt, but it worked and does not need cutting back. Before flattening the balls of dough, I rolled some in sesame seeds, some in poppy seeds, and the rest I topped with a chunk of chocolate. All were delicious but the poppy seeds, which I was also doubtful about at the time, added a surprisingly nice extra layer of crunch. I will do it again. I might even try a version with some poppy seeds included in the dough next time.

Very easy to make. Soft texture but cookie held together well. Mild flavor (I think my cardamom was too old, so will increase a little until I buy a new jar).
Made these for a new Afghan family in my neighborhood - hope they like the cookies!

Exotic and delicious and really easy to make.
