Nostalgic comfort food and a kid's delight. Been a fixture in our home for years. Not your typical Sloppy Joe. My daughter and I came up with this recipe when she was four. It was her first cooking experience. After seeing me add the beer, I had a difficult time getting her to eat it. Maybe this is the reason she dislikes cooking to this day. When asked by my son-in-law about her distaste for cooking, I innocently blamed my wife. Note: It freezes well and is a great option for camping fare.

Ingredients
  • 1 pound lean ground beef
  • 4 large burger buns, lightly toasted
  • 1/2 pound bacon, cooked and crumbled
  • 16 ounces canned pork & beans (we like Bush's)
  • 1/2 teaspoon Smoky Montreal Steak Seasoning
  • 1/2 cup chopped onion
  • 1/3 cup beer
  • 5 ounces tomato juice
  • 1/3 cup BBQ sauce (we like Stubb's Original)
  • 4 large burger buns, lightly toasted
Directions
  1. Fry bacon until cooked, but not overly crisp. Drain grease and break bacon into pieces and set aside.
  2. Fry beef, breaking into small chunks. Drain all but 1 tablespoon of grease, and set aside. Saute onion in grease and add remaining ingredients.
  3. Simmer until hot and serve open faced on buns with Kosher Dill pickles on the side. Very juicy...not intended to be a "pick up and bite" sandwich unless you like puddles in your lap.
