Ingredients
  • 1 cup cornmeal
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/4 cup coconut sugar
  • 1 piece orange juice and zest
  • 1 cup fresh cranberries
  • 1 piece egg
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon vanilla extract
  • 1/2 cup almond milk
  • Maple Syrup and Greek Yogurt for Serving
Directions
  1. In a bowl mix flour, cornmeal, baking powder, salt and set aside.
  2. In a small saucepan add cranberries, coconut sugar, orange juice, and zest. Let it simmer on low heat for 5 minutes.
  3. In a small bowl mix egg, almond milk, olive oil, and vanilla extract. Add this to the dry ingredients.
  4. Mix until incorporated, add the cranberries and mix until it combines with the batter. Try not to over mix.
  5. With the waffle maker on, spray some oil and add 1/4 cup of batter and cook for 3-4 minutes.
  6. Add some maple syrup and yogurt for serving.
