Adobong adidas, as most Filipinos call it is a version of adobo using chicken feet. Adobong adidas is a well-loved ulam and pulutan (side food in drinking sessions). It goes really well with rice and with any kind of drinks. —Mr. Hugh's Kitchen

Ingredients

500 grams
chicken feet
-
1/2 cup
soy sauce
-
1/4 cup
vinegar
-
water
-
4
garlic
-
1 piece
onion, medium size

2 pieces
bay leaf

1 tablespoon
cooking oil

peppercorn
-
salt

2 pieces
chili peppers
Directions

Put in chicken feet, 1/2 cup water, soy sauce, vinegar, half of the onions, bayleaf, and garlic in a pot. Bring to a boil over medium heat until the sauce is reduced.

When the sauce is reduced, add in more water and let it simmer for 30 minutes until the chicken feet are tender. Keep adding water as needed. When the chicken feet are tender, remove from the heat and separate chicken feet from the sauce.

In a pan, heat oil and saute the remaining garlic and onion until golden brown.

Add in the chicken feet and stir occasionally until very tender. The skin should be peeling off at this stage.

Put the prepared sauce and let it simmer for 3-4 minutes. Adjust your seasonings as needed.

Add the chili peppers and let the mixture boil for 1 more minute.

Remove from heat and serve while hot!
