French Fries ala McDonald's

Almost everyone would agree: McDonald's has the best fries. But with restrictions on fast food eating, we definitely miss those fries! At some point we tried making them at home, and we got disappointed because we couldn't seem to get the right process, right? Well, after a bit of experimentation and research, we found the perfect recipe for the perfect fries! —Mr. Hugh's Kitchen

Ingredients
  • 4 pieces russet potatoes
  • water
  • salt
  • 1 tablespoon vinegar or baking soda
  • cooking oil
Directions
  1. Peel the potatoes carefully then cut it lengthwise into french fries cut. (If you prefer fries unpeeled, you may skip this step.
  2. Put the peeled and cut potatoes into a bowl of water and rinse it to remove the extra starch. Fill the bowl with water again and soak the potatoes for about 5 minutes before rinsing it again.
  3. After 5 minutes, transfer the potatoes into a casserole, and fill it with water. Do not put too much water. It should be just enough to submerge the potatoes.
  4. Put 1 tbsp of baking soda OR vinegar into the water and potato mixture. (Make sure baking soda is fully diluted.) Then let it boil for 10 minutes. (Do not over boil the potatoes or they will become too mushy. We just want it to be half-cooked.)
  5. Put the potatoes into a strainer to put out all the water. Transfer it to a bowl or large plate with tissue paper to dry to let them fully dry.
  6. Once the potatoes are dry, heat the pan and put cooking oil. Deep fry the french fries for just about 3-4 minutes. DO NOT OVER FRY! After 4 minutes put them into the strainer to cool down.
  7. After cooling down the fries, put them neatly into a ziplock and place them in the freezer for about 5-8 hours. This will make your fries puffier on the outside and creamier inside.
  8. After freezing the fries, they are now ready for the final fry. Heat the pan with cooking oil. Once the oil becomes very hot, deep fry the french fries until golden brown.
  9. Remove from heat, put some salt for seasonings (or other french fries flavor you prefer) and serve hot. Enjoy!
