We came across this dish at a main restaurant at Ritz Carlton in Cancun on our vacation in Mexico. While devouring it, I was plotting how to get a recipe out of our waiter, but he was gracious and just gave it to us with a smile. It has been a while since I got the recipe, but we keep making it regularly. It is a super simple and fast recipe. it normally takes me 15-230 min to prepare it. I also love that I don't have to cook anything. It is a perfect summer recipe, when it is so hot outside, you can sit and enjoy this mouthwatering Baja Tuna Tostadas with a glass of chilled wine. Ingredients

tuna

cucumber

shallot

1 sprig
scallion

1/2 cup
juice of freshly squeezed orange juice

2 tablespoons
ponzu

1 tablespoon
soy sauce

1/3 cup
lettuce

1/2
jalapeño
Directions

Slice tuna into medium side cubes. Combine orange juice, ponzu and soy sauce. Pour over tune, mix and let it marinate for 5-10 min, while you prepare other ingredients.

Dice cucumber and shallot. Slice lettuce into medium stripes. Slice jalapeño and scallion. Mix the ingredients together and combine with tuna. Mix it all up.

Warm up tortillas in microwave for 20 seconds. Place tortilla on. plate. Add 1/3 tuna mixture. Serve and enjoy. Pairs amazingly well with chilled white wine.
